Tip question

You know... that post below about tipping made me think of a question.

What about the tips at like, ice cream shops, coffee shops... burrito shops...
You know, any place where they have that nice big glass bowl for you to stuff money in there please-and-thank-you. (more like the sign says DO IT or else you are a BAD PERSON.)

Anyways, my question is... do these people earn at least minimum wage here in US? Or are they on a waitperson's type of hourly wage?
What is up with this custom?
