I just got an email back from the professor today:
"Hi A~~~~,
I reviewed the power point you just emailed me and I don't recall your power point. At this point there really is nothing more that can be done. The final grade you were given will remain. I asked all my students in an announcement to review all their grades before I submitted the final grades to ~~~. This topic should have been brought up during that time not after the grades were already submitted. I've attached the announcement I sent out to all my students for you to reread.

I have put in all your grades into the grade center. Please review all grades submitted. If there are any discrepancies, please email me by tomorrow afternoon. I will be submitting ALL final grades by tomorrow evening. Once grades are submitted they cannot be changed! Thank you.

My response:
"It is my understanding that the submission record itself is saved in Blackboard. If you are refusing to do anything further, I will be escalating this. Thank you for your help. I will see what the department head and technology department can do to help me from here on out. At no time prior to this was there any discrepancy in my grade. I actually checked the evening before the course was closed and everything was fine. Thus, the error occurred after the course had been closed at some point.

So, from here I go to the department head and at the same time, the technology department? What about Blackboard support? I am going to start sending emails tonight. This is wrong in every possible way... ugh. Any other advice would be very appreciated. You guys have been incredibly helpful. :)
OMG... I contacted Blackboard support. SHOCKING ANSWER. No joke. Omg. I am so angry...
A snippet from my chat with BB support:
J~~~~: Okay, I was verifying with a colleague as to whether or not I could send you a screenshot. I cannot.
J~~~~: However, I do see that you submitted the assignment and got a grade.
A~~~~: I see. The screenshot would be a lifesaver.
J~~~~: Then the instructor overrode the grade and gave you a zero for some reason.
A~~~~: Can you copy and paste the feedback, grade, or anything similar?
A~~~~: I see. Interesting.
A~~~~: And she lied to me about it... Ouch. The dean will be very interested in this.
Update to the update: I have not heard back from either dean on this issue. The professor claims that the HUM dean of her campus is "well aware of the situation." My dean asked for the professor's name and never got back to me. How long do I wait...? Who do I go to next?
Another quick update, in case anybody is still wondering... The HUM dean emailed me back when I poked her asking about why I haven't heard from her in a week, and she let me know that she had forwarded the proof to the professor and was waiting to hear back and have my grade fixed. This was at the beginning of the week. Still nothing. I will make a conclusion post with all of this once it's finally resolved, hopefully there isn't more b_s to add to it...
